Here's my home made recipe for enchiladas -
1 package flour tortillas
1 lb. ground pork/ Italian sausage
1 lb. ground beef
Salt & pepper to taste
1 clove of garlic, minced
1 can of sliced black olives
1 lg. can of red enchilada sauce (hot or mild, as you like)
great big chunk of Cheddar, Monterey Jack, or Colby cheese, grated (or mix all three- even better)
1 sm bunch of green onions
Shake up can of enchilada sauce and pour some into the bottom of a 10 x 13 glass baking dish. Mince green onions and tops into small pieces, set aside. Grate cheeses, set aside. Open can of black olives and drain; set aside. Combine ground pork and ground beef with minced garlic and cook in large skillet until browned and thoroughly cooked;season w/ salt & pepper to taste and set aside. Remove flour tortillas from package and warm on griddle one by one until whole stack is warm & pliable; wrap in cotton kitchen towel.
To assemble: Take warm tortilla and dip both sides in sauce in baking dish. Place tortilla flat in dish and put a large spoonful of meat mixture (approx 1/4 cup) in a line down the middle of the tortilla. Top the meat mixture with sliced olives, some of the green onions, and some of the grated cheese. Roll tortilla with filling inside into a tube shape and push to the end of the baking dish. Repeat with the rest of the tortillas and ingredients until you run out (reserve a small amount of sauce, cheese, and green onion for garnish). When the baking dish is full, spread any remaining sauce over the tops of the enchiladas, and sprinkle with remaining grated cheese and green onion bits. Cover dish tightly with foil and bake at 350 degrees for 35-40 minutes or until heated through and cheese is melty. Makes enough for 4 people.
